Hey guys! Most of you probably know that I love smoothie bowls and oatmeal, but sometimes those types of foods lack a "crunch" that I love so much! I use granola for topping smoothies, oatmeal, or even eating by itself. But, many granolas out there have ingredients I can't even spell and are filled with processed foods that simply do not need to be there. I wanted to come up with a granola that had simple ingredients, was very healthy and still super yummy! Here is my recipe for "raw"nola, enjoy!
Ingredients:
2 cups raw buckwheat
1 cup gluten free oats
1 cup shredded coconut
3 tablespoons chia se eds
1 teaspoon cinnamon
2 teaspoon coconut sugar
5-7 pitted midjool dates
2 tablespoons melted coconut oil
Preheat the oven to 180 F
Place all ingredients in a large bowl and mix well. Then place the mixture into a food processor and pulsed until you like the consistency; crunchy and not too shredded. If you do not have a food processor, you could easily use a blender pulse mode. Spread the mixture onto a parchment lined baking sheet and place in the oven for 2o minutes, stir and leave it in for another 10 minutes.
Make sure it comes out nice and crunchy!
Let it cool, and place in a jar or container of your choice. Enjoy!
