If you love Mexican food, this post is for you! Yesterday I decided that Mexican food for dinner sounded like a great idea, so of course I had to dig around in my fridge to see what I could come up with. I decided on some sautéed mushrooms, brown rice, corn, and black beans and of course chips and salsa!
I love salsa. I love it with chips, on top of veggies, tortillas, and even by itself! To make this dinner even more fabulous I wanted to try to make my own version of mango peach salsa. This recipe is simple and doesn't take a long time to prepare, so get your kitchen ready for some amazing flavors; here is what you will need:
1 cup of chopped tomatoes
1/2 cup chopped peaches (peeled or not peeled, depending on your preference)
1/4-1/2 cup chopped onion (more or less depending on how you like it)
1/2 cup chopped mango (peeled)
1 clove minced garlic
a handful of chopped cilantro
1 teaspoon ground pepper
optional for extra flavoring:
salt to taste
onion powder
garlic powder
To chop the peaches and mango I used an electric chopper on slow, but feel free to use a knife, a blender on pulse mode, or even a regular chopping tool. Be careful not to blend too much, you should still have chunks left after everything is mixed.
In a large bowl combine the ingredients together, after they have been chopped to your liking. Make sure to taste it, and add any extra flavoring, salt, or pepper you feel is needed. Cover and put into the fridge, and wait for it to chill.
