Hi everyone! Of course, knowing me I love snacking and finding fun new recipes to try out. Well here is an amazing bar recipe to take on the go, eat as dessert or just have as a great snack; gluten free and vegan of course! Here is what you will need:
2 cups of berries (your choice, I used blueberries and a few raspberries)
1/4 cup water
2 tablespoons maple syrup
2 tablespoons hemp seeds
1 tablespoon lemon juice
1 cup gluten free oats
3/4 cup shredded unsweetened coconut
1 cup almond flour
1/2 cup melted coconut
1/2 cup coconut sugar (or brown sugar)
*feel free to alter this recipe to fit your needs, it is a sweet treat so if you would like something less sweet you can always add in less sugar
The first thing you need to do is combine the berries, water, maple syrup, hemp seeds, and lemon juice in a sauce pan. Bring mixture to a boil then reduce the heat and let simmer for 10-15 minutes. Once it has been heating for about 10 minutes, transfer it to a bowl that can be paced in the fridge. Preheat the oven to 350º while you are waiting.
While the berry mixture is in the fridge, work on mixing your dry ingredients together. Add oats, coconut shreds, almond flour, melted coconut, and coconut sugar into a large bowl. Mix well.

Once your oat mixture is ready, line a pan with some coconut oil (I used an 8x8 in pan). Place half of the oat mixture into the pan, layer with all the berry mixture and then add the rest of the oat mixture on top. Make sure to spread evenly. Place in the oven for about 25 minutes, or until golden brown. When its done, take it out and let it cool down! You can put this in the fridge and have it ready to go. Enjoy!
